Grilled Watermelon salad with feta, mint and Opito Bay Natural sea salt

Ingredients:

            •          1 small watermelon, sliced into wedges

            •          1 cup crumbled feta cheese

            •          Fresh mint leaves

            •          Extra virgin olive oil

            •          Opito Bay 100% Natural sea salt

Instructions:

Grill the watermelon wedges over medium-high heat until grill marks appear, about 2 minutes per side. Arrange the grilled watermelon on a serving platter. Sprinkle crumbled feta cheese over the watermelon. Garnish with fresh mint leaves. Drizzle with extra virgin olive oil and finish with a light sprinkle of natural sea salt. The sea salt accentuates the sweetness of the watermelon and complements the tangy feta and refreshing mint flavours.
