Solnitsata, the oldest known town in Europe, was built around a salt-producing facility. The port of Liverpool grew from a sleepy village into a global powerhouse because of its proximity to the Cheshire salt mines. The Polish Empire rose and fell with the fortunes of the rock salt on which its wealth depended.

If someone didn’t already have dibs on the ‘100% Pure NZ’ logo, then Opito Bay Salt Company could well be a worthy contender.

The fledgling company run by Perry Cornish and his partner, Erin Mone, has been in the business of making salt for around two years. But this is not your regular, common or garden variety of salt, produced on an industrial scale with chemicals added. This is hand-crafted artisan salt, sourced from the glittering, clean waters of the Coromandel, right outside Perry and Erin’s door on Blackjack Road.

It’s a story we all love to read – a couple moves away from their stressful, corporate, city life and finds peace and purpose in their new rural life.

Coromandel’s Opito Bay residents Perry Cornish and Erin Mone have done exactly that and are now immersed in their own “farming” venture, collecting seawater to make the first 100 per cent natural Coromandel sea salt and flavoured artisan salts.

Perry Cornish was brought up in Hawke’s Bay on a property adjoining orchards and is the son of well-known butcher, charcutier and chef, the late John Cornish. He describes his childhood as “full of hunting, game and good food”.

COROMANDEL GOODNESS

There’s something life-affirming in knowing exactly where our food comes from.

Salt, is a staple we use to season nearly every dish we eat.  It contains many of life’s essential minerals like calcium and magnesium. Put simply - life wouldn’t be the same without salt!

So we were stoked when a new artisan producer of salt emerged on the Coromandel, forming a genuine connection from the sea to the salt we use in our cooking! The Coromandel is increasingly becoming recognized across NZ as the home of inspiring food and beverage makers judging by recent successes in the 2022 Inspire NZ Artisan Food awards.

Not only in the Coromandel but throughout New Zealand, local company Opito Bay Salt Co. seems to be making waves. In last week’s NZ Artisan Food awards, the company claimed an astonishing 8 Gold medals in the National awards run by Supermarketnews magazine.

THE INFORMER MERCURY BAY

At its very first attempt, Opito Bay Salt Company (OBSC) won multiple medals at the prestigious Outstanding NZ Food Producer Awards last week. Their success is all the more remarkable because the company - which produces a range of solar-dried sea salts - is only in its first full year of production.

“We were absolutely astounded,” said Perry Cornish, who set up the artisan salt producer with his partner, Erin Mone. “We didn’t really hold out too much hope, we just thought it would be nice if we got something. It is just incredible.”

In the end, OBSC ended up collecting five medals - two golds for their natural and rosemary sea salts, two silvers for their smoked chilli and black garlic offerings, and a bronze for their furikake seasoning. Continue reading…
