Thoroughly wash the lemons to remove any surface impurities. Cut the lemons into quarters without cutting all the way through, leaving them attached at one end. Generously sprinkle Opito Bay Natural sea salt inside each lemon quarter. Place the salted lemons in a clean, sterilized glass jar, pressing them down to release their juice. Continue layering lemons and sea salt until the jar is filled, ensuring the lemons are fully submerged in their juice. Seal the jar tightly and store it in a cool, dark place for about 4-6 weeks, allowing the lemons to ferment and preserve. Once ready, rinse the preserved lemons under cold water to remove excess salt before using. The preserved lemons add a unique tangy and salty flavour to various dishes like tagines, salads, and stews.
